Italian Spaghetti Sauce Recipe

There are several ways to season spaghetti and this Italian spaghetti sauce recipe is just one of them a strong Mediterranean flavor based on tomatoes as many Italian sauces are.

Also vegetarians will love the ingredients that this recipe calls for, tomatoes, capers, olives and chili pepper play the big game here.

I usually recommend San Marzano plum, puree or diced tomatoes if possible when tomatoes are the star, it will make a great difference in taste. This is an easy Italian spaghetti sauce recipe that anyone can make a flavored pasta sauce with just a few ingredients.

All the ingredients are so natural and simple tomato, olives, onion, capers and hot chili.

Start by chopping on a cutting board the shallot making a few horizontal and vertical cuts and keep aside.

Chop the tablespoon of desalted capers and olives keeping carefully away your fingers from the blade as the picture shows.

Preparation

Olives and capers are finely chopped ready to be cooked in a sauce pot, although this sauce reminds me another famous spaghetti recipe known as puttanesca from South Italy.

Ingredients: serves 4

  • 1 lb (450gr) puree canned San Marzano tomatoes or fresh if available
  • 8 or 10 large pickled green olives
  • 1 Tbsp (15gr) salted capers (rinse the capers with lukewarm water as they are very salty)
  • 1 shallot (shallots with their sweet and more delicate flavor, make a nice onion substitute in a variety of Italian dishes)
  • 2 Tbsp of extra virgin olive oil (recommended)
  • 1 chili pepper
  • ingredients enough to sauce about 12 oz (340g) of spaghetti.

Preparation: easy 20 minutes

  1. Pour about 2 Tbsp of extra virgin olive oil (it's a must for this Italian spaghetti sauce recipe), heat up and add the chopped shallot.
  2. Cook and stir until translucent.
  3. Add the tomato puree and cook for about 10 minutes.
  4. Add the capers and olives previously well chopped and keep cooking for about another 20 minutes.

NOTE
I regularly choose the juicy plum canned San Marzano tomatoes when the fresh ones are not available, because they are ideal to make a great tomato pasta sauce rich of flavor and taste. Add a few more whole olives, capers and a piece of chili as you like.
