Salted ricotta (ricotta salata) is a firm salty grating cheese that is common in Southern Italy, but if it is hard for you to find it you can substitute with Pecorino Romano.
Arugula is an aromatic salad green and it's also known as rocket, roquette and rucola very popular in Italian cuisine.
With these ingredients you will make enough sauce to season about 12 oz (340g) of spaghetti.
1. Brown lightly a chopped onion and 2 cloves of garlic with 2 tablespoons of oil.
2. Add the tomato puree salt and pepper to taste and cook for about 15 minutes over medium heat.
3. Add about twenty arugula leaves washed and dried to the tomato sauce.
